Cornmeal Muffins

This is the recipe for cornmeal recipes I developed as a teenager while living with my Gran.

1 cup cornmeal
1 cup flour
2 tsp baking powder
1 tsp salt
1/3 cup sugar (or to taste)

Mix together dry ingredients and set aside.

1 large egg
1/3 cup oil
1 cup canned milk
2 tsp vanilla extract

Blend wet ingredients.  Pre-heat oven to 350F.

Add wet ingredients to dry ingredients and stir till just mixed together and there are no dry clumps left.

Grease a muffin tin with butter.  Fill tins 2/3s full.  Bake 16 - 20 mins till done (do the finger press test).

Serve hot or cold with butter and honey, or molasses, or jam, or gravy...

Tastes mighty fine.
